recepes with drinks

Postby Flemisch Lionesse » Wed Feb 11, 2009 6:47 am

In the thread Best food for drunkards, I referred to food cooked with drinks. I did not have time yet to dig up more recepes, but I will start with an easy way to prepare a sauce...

Let's say it's mushrooms.

Frie the sliced mushrooms on low temp. If there is too much liqiud, poor it away. Heat the pan and poor some brandy or white wine over the mushrooms. Let it boil for just a minute. Then ad cooking cream and let it cook until it thickens.
Ad seasoning if prefered.
Sauce is ready to be served.

Rub a pork loin roast with a mixture of chili, cumin, lime juice, olive oil and a dash of beer. Put in a greased baking dish and in the oven at 475 for 15 minutes. Put the heat down to 300 for 40-45 minutes. Take the thing out, remove the pork loin and let it rest. Meanwhile, put the baking dish on the stove, medium-high heat, and pour half of the beer you should be drinking at the time in it. Let it reduce, thicken with any starch if necessary and pour some of that sauce on a few slices of pork. congratulate yourself.

Cut potatoes in wedges. boil them in water until they're not quite done. Dry them with a towel. Heat up some duck fat. throw the potatoes in. when they're brown and crusty, add some minced garlic and chopped fresh parsley and serve. And you have pommes à la sarladaise.

Oh. And have a glass or 10 of good syrah (australian jacob's creek works for me) before, during and after. That counts as a recipe with drinks, doesn't it?

actually the deal is to use at least a bit of the drink IN the food, what you do with the "left-overs" is of course your own choise...
Let's try it out some time...

That pork sound good -- kinda Cuban.

Here's a Cuban recipe for Arroz con Pollo, (chicken and rice)

Cut up chicken
Diced Onion
bottle of stuffed Spanish Olives
garlic powder
salt & pepper
can of tomato sauce
bottle of beer

Cut up the chicken and sprinkle with salt, pepper and granulated garlic. Layer it in a bowl with the diced onion, and the olives along with some of the olive brine and put it in the fridge overnight. The next day, brown the chicken in a little olive oil. Add the onion, olive mixture and saute for a few minute. Add one bottle of beer -- beery beer and add the can (8 oz) of tomato sauce. bring it to a boil and then simmer. Put on a pot of rice and drink the other 5 beers in that sixpack. It should all be done in about 30 minutes.
It's always a good day to get ripped!

Actually I should have posted this before Valentine...
But whatever, can be used on other days as well.

In a high glass, put a spoon of fruit sorbet - strawberry, peach, lemon, melon,... - slice some fresh fruit (same as sorbet) and add them too. Poor champagne over the ice and fruit. This can be a dessert or even a thing your loved one for breakfast.

To my taste, strawberry, peach and passion-fruit are the best.

Hello. whats up. let me post Ice Cream Recipes.

Prepare fruit by sprinkling sugar over it.
Let it stand one hour, press through a coarse sieve and stir into American ice cream when the cream is frozen to a mush.
If seed fruits, such as currants, are used, strain through a fine sieve or a piece of cheesecloth and use the juice only.
The juice can be pout into the freezer with the cream and not served until later, as in the case of the mashed fruits.
Grated pineapple with the addition of a little lemon juice makes a particularly fine fruit cream.
